As many of you know, I recently had my tonsils removed (insert frowny face here). So, as you can imagine, I haven't been about to eat much, let alone do much. Since I spent a full seven days virtually bedridden, I watch a whole season and a half of The Great British Baking Show, and inadvertently found a sudden passion for baking. Whether this hobby will stick is up in the air, but for now, I'm feeling pretty invested. I had done some simple baking before, but not usually completely from scratch. In the last three days I have done two bakes; one, a custard tart (that turned out to be unexpectedly lovely), and these killer cookies.
With all that being said, I have now followed way too many food bloggers on Instagram in the past week because seeing food is the closest thing I've has to eating it, and I stumbled upon this awesome blogger titles @halfbakedharvest. She has amazing recipes not just for baking but for meals and snacks too (anything you can imagine). I decided to try out these "Pistachio Butter Cookies with Chocolate Tres Leches Drizzle." (Have you ever heard anything so heavenly?) I have linked the recipe here if you would like to try them yourself. Also, I'm linking my favorite food blogs below.
The only things I tweaked about the recipe are, I decided to add coconut to my cookie dough and shaped the cookies more squared. The coconut gave them a sweet bonus. Not only do they look unbelievable, but they don't take that much time either. My family is loving them. They have a great sweetness to them without being too rich. I think they would be perfect with a cup of tea or just a classic glass of milk.
