Blueberry Hand Pies
I never realize how lucky I am to have my amazing family until I'm leaving. As you can expect, I am leaving home to go back to college soon, and it just makes me appreciate spending time with my parents so much more.
Sometimes it's nice to leave them a small gesture just to show them how much all their large gestures mean to me. Upon this thinking, I had to decide what to make for them and, of course, desserts into my mind.
The answer to a good summer dessert is always pie, thought the curious 19 year old (me). So, I made these snack-able sweets for my family, and my dad's words were precisely, "the best things ever." Needless to say these blueberry hand pies were an absolute hit.
The recipe I used was from King Arthur Flour but I made a few changes. The link to the whole recipe is at the bottom of the post.
Something I like to do with pie crust is to add a little sugar to the dough so that the ends (without filling) are just as enjoyable as the filled middles. Therefore, to the pastry ingredients, I would add a tablespoon of sugar.
Secondly, I found that the ingredients for the filling made much more than the recipe had crust for so, doubling the amount of crust you make is a perfect way to use all of the filling.
In regards to the look of them, I find it best to believe in the perfectly imperfect look. I like the edges a little extra done and each of the pies to have their own character.
The end result was almost like a magnificent homemade pop tart, perfect for breakfast, a snack with a cup of tea, or dessert after dinner.
